Vinification:
This single block of Viognier is picked early morning to ensure cool bunches reach the cellar. The bunches are whole bunch pressed with a long pressing cycle to extract as much free run juice as possible. After a short settling period, the juice is racked off with some fne lees to tank. The lees add richness and texture to the wine. Post fermentation, the lees is mixed a few times to enhance favour.
Floral notes of honeysuckle, orange blossoms, jasmine and apricot explode on the nose and carry through on the palate. With a rich, textured and opulent mouthfeel, balanced with fresh peach and citrus notes, this wine makes for a great pairing with any meal – spicy and fragrant to meaty and rich.
