Sauvignon blanc 2023
Alc: 13.69%; RS: 2.1g/L; pH: 3.34; TA: 6.1g/L
Vinification:
The Sauvignon blanc is picked from a single block on Cape Vue in the early morning to ensure cool bunches reach the cellar. The bunches are de-stemmed and crushed lightly to extract free run juice and then pressed to Stainless steel tank for settling. After a longer settling period to ensure good compaction of the lees, the clean juice is racked off and fermented in stainless steel tank. After fermentation is complete, the wine is left on its lees to increase structure and mouthfeel, until bottling.
With a complex bouquet of tropical fruit, lemongrass, grapefruit, white fowers and mineral notes – this Sauvignon Blanc bursts from the glass. With fresh acidity complimented by a rich mouthfeel due to time on primary lees makes this a clean, fruit driven and refreshing wine to be enjoyed on its own or with a meal.
