A superbly balanced Sauvignon Blanc, with crisp elegant acidity,
characteristic tropical fruit and a long lingering finish.
The grapes were harvested in two stages, a week apart, and left
on the lees to add st ructure, flavour and complexity.
Perfect with fish on the coals or fresh oysters.

Analysis: Alc: 13.5%; RS: 3.0 g/L; TA: 6.2 g/l; pH: 3.23
Grapes were harvested in the cool early morning at 22.5°B, gently crushed and pressed to a low 1.4 bars of pressure. The juice was left to settle for two days before fermentation. Fermentation occurred over a 16-day period and wine was left on the lees for 3 months. 14% Semillon was added to the Sauvignon Blanc before stabilisation, filtration and bottling.
On the nose, the wine opens with lifted aromas of passionfruit, gooseberry and fresh lime zest, layered with subtle notes of green fig and white peach.
Wine was bottled on the 15th of September 2025.
