Vinification:
Grapes were harvested at 25.8°B, gently crushed and fermented in half-ton open-top fermenters. The grapes were punched down by hand 3 times a day and fermented until dry. The wine underwent malolactic fermentation in barrel and was matured for 27 months in 16% new and 84% 3rd and 4th fill French oak barrels to produce a well-integrated, complex profile.
The nose is rich and layered, offering aromas of black plum, ripe blackberry and dark cherry, interwoven with notes of black pepper, clove and subtle fynbos. Hints of dark chocolate, cedarwood and sweet spice emerge, adding complexity while allowing the fruit to remain at the forefront. On the palate, the wine is full-bodied and structured, with firm yet polished tannins supported by balanced acidity. Flavours of cassis, mulberry and savoury spice unfold into nuances of mocha and toasted oak.
Wine was bottled on the 16th of September 2025.
