Vinification:
This single block of Viognier is picked early morning to ensure cool bunches reach the cellar. The bunches are whole bunch pressed with a long pressing cycle to extract as much free run juice as possible. After a short settling period, the juice is racked off with some fine lees, to tank to be inoculated for fermentation. The lees add richness and texture to the wine. Post fermentation, the lees is mixed a few times to enhance flavour.
Floral notes on the nose carry through on the palate. Richness and texture, balanced with peach and citrus makes this a great wine to accompany any meal, spicy and fragrant to meaty and rich.
